You want to be begin Android Application Development. But how do you get started? The first thing you need is to download and install the development tools. The good news is they are free and fairly straightforward to setup. The bad news is there are so many options it can become confusing which tools are required, optional or compatible with your desired setup. Following the setup I am using and will work for you if you using a Windows system.
Step 1. Install the following tools
- Eclipse IDE for Java Developers (v3.5 Galileo)
- Java Platform (JDK 6 Update 18)
- Android SDK Tools, Revision 4

Great Teams An Interview with Don Yaeger
I had the opportunity recently to interview Don Yaeger, the former Associate Editor of Sports Illustrated and author of twenty-five books, nine of which have become New York Times best-sellers. His newest book is titled, Great Teams: 16 Things High Performing Organizations Do Differently. Here are his responses to my questions. As a Patriots fan, I especially loved his answer to my final question!
1. You focus in the book on the notion that great sports teams build a strong high-performance culture. You say that matters more than having the right offensive or defensive schemes and strategies. Can you describe the most important elements of a high-performance culture?
Don Yaeger: Culture is a buzzword that is all over the business publications these days, so I think it’s important to define it. In considering how the word specifically applies to a team setting, I came up with two possible definitions: 1) the conditions within the organization that promote either growth or failure and 2) the shared understanding of what to do in adverse situations. The effort to achieve that culture can be broken down to four essential pillars that I believe set a truly Great Team apart from one that simply performs well.
• Targeting Purpose— The team is connected to a greater purpose. Members understand whom they are serving and why that matters.
• Effective Management— The team is able to think creatively and act dynamically in order to stay fresh, effective, and relevant.
• Activating Efficiency— Each member of the team brings a unique set of talents, experiences, perspectives, work ethic, personality traits, and know- how that melds with and complements those of the other team members.
• Mutual Direction— There is a strong sense of understanding, appreciation, shared responsibility, and trust that unites and motivates the team to work together.
After studying the subject carefully and discussing it with truly great leaders, I found sixteen defining characteristics that special teams— the ones that are in a class by themselves, that accomplish more than just a winning season or a successful fiscal year, that pack extra punch and bring a degree of excitement to what they do— all share. These traits can be worked on independently by individual team members, but the truly outstanding teams use them to build on one another. Organizations that exhibit real greatness combine talent, relationships, and innovation in a variety of ways for the sake of achieving a shared goal.
2. What makes it so difficult to build such an effective culture? What are some of the obstacles that prevent certain teams from achieving that type of culture?
Don Yaeger: Individual friction and dysfunction sink many teams and often lead to unhealthy cultures. While 100 percent camaraderie is the dream scenario for team culture, some degree of dysfunction is likely in even the best situations. When a team has strong personalities and talented people, there will inevitably be friction. Great Team leaders know how to manage friction and personality conflicts to keep challenges from derailing the team’s success. In this chapter we will consider examples of how some Great Teams handled dysfunction by promoting cultures in which the members were motivated to appreciate their respective values to the teams’ overall goals even though they didn’t always like each other.
3. What role does culture play in the recruiting process, and why is that so important?
Don Yaeger: Purpose and leadership are essential to building a team culture. Once an organization determines its “why” and aligns its leadership style with the needs of its members, it is on the right path to becoming a Great Team. But culture building doesn’t stop there. A team must also recruit the right talent. If done well, recruiting will result in a highly competitive team that is consistently motivated to seek and claim success. Great Teams recruit players who fit— who will thrive within the established team culture and add value to it. The talent of the employee or teammate is important, but fit trumps all. These organizations understand that Great Team culture establishes an environment conducive to success, but that success ultimately depends on the right kind of personnel.
4. You argue that purpose is essential to great teams, yet many businesses define their “why” incorrectly. Can you explain?
Don Yaeger: In the business world, a “why” is often misunderstood as a company mission statement or code of ethics— which couldn’t be further from the truth. Author and motivational speaker Simon Sinek has described a company’s corporate “why” as “always disconnected from the product, service, or the act you’re performing.” If an organization desires to become a Great Team in the business world, then it must understand how to utilize the “why” properly in order to galvanize support from its professional ranks. “When an organization lays out its cause, how it does so matters,” explained Sinek. “It’s not an argument to be made, but a context to be provided. An organization’s ‘why’ literally has to come first— before anything else.”
Companies that understand the purpose and philosophy behind the “why” are usually astute, high- performing organizations that tap directly into the pulse of those they benefit the most. When utilized correctly, this understanding can create a powerful sense of duty and purpose for business teams because the employees know exactly whom they are working for and to what end.
5. You say great teams “speak a different language.” What do you mean by that, and why is that so crucial?
Don Yaeger: Through success or failure, great leaders always know what to say to bring out the best in their organizations. Many teams undervalue the art of properly framing communication, especially in times of struggle. Successful leaders do not berate or chide team members but seek ways to positively articulate objectives and expectations. They have better coaching conversations, ask better questions, and drive results. Positive communication is not only a habit for high- performance teams but also a tool used to reinforce and enhance the values of organizations.
Communication that inspires, motivates, and encourages is one of the most important steps in achieving greatness. Through the good and bad, articulating praise and criticism in positive ways is essential to the success of the team. When you speak the language of a Great Team, you communicate constructive feedback that penetrates even the most unwilling ears— and keeps people motivated long after the feedback has been received. That language includes leading by example, asking the right questions, using effective praise, and affirming character.
6. Why is it so difficult for some successful teams to avoid complacency? Do you have any tips to guard against it?
Don Yaeger: Complacency is perhaps the most common pitfall for Great Teams. A hard- fought victory or successful season can make even the most dedicated organizations drop their guards or spend just a little too much time patting themselves on their collective backs. Overcelebration can easily consume the mood of an entire organization, stifle improvement efforts, rot work ethic, and create laziness. The glow of victory makes the pain and sacrifice of a championship easy to forget; however, Great Teams reject the sense of entitlement that comes after an epic win or championship. To win continuously, a team has to challenge the false belief that what’s been accomplished will naturally happen again.
The Great Teams avoid the common pitfalls of success by defying human nature. Consistently dominant teams realize that the most common reaction to any success is satisfaction. Overcelebration breeds complacency, and many championship teams fail to repeat due to a lack of focus after an epic win. For a team desiring to avoid a championship hangover, leaders should limit the time focused on celebrating victories— even as the championship banners are being raised. It’s never too early for a team to discuss the temptations of victory and new goals worth fighting for. The teams that sustain success make daily commitments to improve themselves and the company rather than rest on their laurels. Their leaders are culturally intelligent, and they restlessly search to find inspiration in the opportunities of tomorrow. They understand that what brought success won’t keep it. In the pursuit of greatness, these teams aren’t afraid to put their streak on the line when chasing after a new challenge. They always play to win instead of “not to lose.” Successful teams should ask themselves, “How do we respond after a record year? In what ways can we defy the natural human tendency to coast?”
Leaders should set aside time after an epic win to discuss new ventures, strategies, and improvements while the previous season or quarter is still fresh in everyone’s minds. This is the time to look deep within and also to examine the marketplace— to spot needs waiting to be filled and come up with unique ways to meet those needs. Repeat champions and industry leaders know how to handle the bull’s- eye effect. These winners stay aware of the targets on their backs and revel in the idea that competitors want nothing more than to take them down. Hungry competitors dethrone corporate giants all the time. But the Great Teams thrive in the midst of competition, leverage their platforms into new spheres of influence, and use the reality of the bull’s- eye effect as motivation to remain innovative. How do you handle the thought of failure? If you are currently sitting on a winning streak, do you merely play “not to lose” instead of to win? Does your team share this same mind- set? The greatest champions of our time expect to win. Why shouldn’t your team? For a Great Team, repeat success is often a byproduct of a high- performing culture. Maintaining championship or industry- leading momentum requires experienced leadership, cultural drivers, and clear communication of the end goal and how to get there. Team members must be connected to the new direction of an organization; people want to feel excited about the future and the potential of progress. Progressive leaders understand these truths and connect their teams to a culture that motivates, challenges, and empowers them to start and to keep winning. The captains of industry don’t stew in failure and defeat but instead are forward thinking, doggedly chasing after the next great opportunity. Always strive to remember complacency, the ultimate pitfall of success— and don’t let it derail your Great Team!
7. Do you have a favorite team or two that you studied and why?
Don Yaeger: I enjoyed studying two of the most successful teams of the 21st Century: the San Antonio Spurs and the New England Patriots. Often outside of the spotlight, the Spurs have built a dynamic team culture and a strong, evolving road map to success and have been exceedingly successful in developing camaraderie through open communication. The Patriots have won consistently despite a constantly changing roster with quarterback Tom Brady being the only surefire Hall of Famer on the squad. Despite very different styles, the two teams have established dynasties in this era of parity.

On this journey Carl meets new friends and fierce enemies in the underground scene of San Andreas, where he gets in contact with the violent gangs of the big cities.
First Grand Theft Auto III, then Vice City and now San Andreas to end the trilogy of the three original locations. A new chapter in the legendary series. Grand Theft Auto San Andreas was released exclusive on PlayStation 2 again and was released on October 26th, 2004 in North America and on October 29th, 2004 in Europe.
On June 7th, 2005 Grand Theft Auto: San Andreas was released on PC and Xbox in North America. It was released three days later in Europe (June 10th, 2005).

Great Skype with Mrs P from California!
Last Wednesday the students had a special guest visit the classroom via Skype! Her name is Mrs. P! Mrs. P is known for sharing fascinating stories with students and encouraging them to be readers and writers! She tells many fantasy stories and shares how she gets ideas ideas to write about.
I had contacted Mrs. P via Twitter to see if she would talk to the students about how writers get ideas, being we have been spending so much time on that topic in writing. She was so excited and glad to meet our 3rd graders! During the Skype, she talked to the students about a writing contest she holds each year for students and classes. During our visit with Mrs. P, the students also had time to ask her questions about reading and writing. The most important thing she told the students is that if you can tell a story, you can write it. That is a super statement to remember as many times the students want to share a story with me about something that happened to them, but struggle to come up with ideas to write about. We now use that statement in our classroom during writing. "If you can tell a story, you can write it.".
It was a wonderful experience to share with Mrs. P and all of 3rd grade. We will get started on our stories for her writing contest soon. I hope the students took something away from Mrs. P. and hopefully we can Skype again soon. She always says that "reading is cool". So is writing!!!

Matthew Jones has written a neat column for Fast Company titled, "5 Ways You Can Improve Your Organization (Without Sacrificing Creativity)." Most importantly, he recommends setting some priorities. He suggests that individuals, "Stop taking on more projects." Similarly, he writes, "Dont attach yourself to every great idea." In other words, know when to say no. You may have tons of creative ideas, but there are only so many that you can develop and implement at any given point in time. You may be asked to participate in lots of exciting projects, but you have to know your limits. Jones argues, "Most individuals will find that their creativity will plummet when trying to take on too many tasks at the same time." I think its terrific advice, because innovation ultimately is about more than creating a new concept or idea. Its about creating AND implementing that new idea. Taking on too many tasks at once reduces the probability that you will transition from creative thinker to effective innovator.

Five Travel Tips From One Vacation Loving Mom to Another
Family travel can forge lifelong memories. Yes, it may be late in the season, but it’s certainly not too late to plan a fun family vacation. To ensure your trip will be enjoyable, though, you need to prepare so you can avoid the easy problems we all face. The following tips -- lessons I’ve learned the hard way, believe me -- should assist in that preparation.
Tip 1: Keep Calm and Carry-On
Having items you might need in an emergency situation is very important when traveling. I use the term “emergency” loosely—this can be when a child is acting up, if clothes are badly spilled on, or a baby wets the diaper. Create a travel pack that is part of your carry-on luggage, or is with you in the front seat in the car (and nor mired away in the trunk). Include diapers, changes of clothing, bottles, non-perishable snacks, aspirin, band-aids, and anything else you think to include. Also include things to pass the time for your children in case of flight delays or traffic. Such comforting items may include a favorite book, an iPod, or a favorite toy.
Tip 2: Hotels for All
Make sure your trip starts off on the right note by staying at a family-friendly hotel. The best resorts offer activities for every age group. Make sure the hotel has something for everyone: look for accommodations with spas and golf for adults, playgrounds for children, and horseback riding and mini water parks for the kids. I used a site called Gogobot to find a hotel in Orlando that the whole family loved, and even provided a free continental breakfast for all of us.
Tip 3: Disposable Cameras, Indispensable Memories
Bring your camera and plenty of batteries/an extra charger so you can document the trip and make the memories last a lifetime. Further, provide your young ones with their owndisposable camera so they can photograph whatever they find interesting during the trip. This is a great way to encourage their creativity, and teach them a new talent. And when you return home, your family can scrapbook all the photos together and create a priceless souvenir.
Tip 4: Routines = Happiness
Everyone needs to make time for rest and nourishment. Thus, maintain your children’s nap and snack times on the road. Similarly, keep your own eating and sleeping regimen consistent. When travelers don’t get enough food and sleep, their energy levels plummet. Ensure you are able to make the most of the trip not by trying to do too much, but by maintaining a healthy regimen.
Tip 5: In-Flight Parenting 101
If your children are prone to motion sickness, speak to their pediatrician about what medication they should take before the flight. Provide your kids with a small snack and drink before boarding a plane. Note, too, that window seats are helpful to fliers with motion sickness. Finally, make sure the overhead air vents are aimed at your children. A comfortable child is a happy child, and this will go a long way in making the flight easier for all.
It may be September, but there is still time to enjoy a late family vacation!

After I recently got a grails app to work with spring-security, REST, and cache I wanted to try my luck and create a Google App Engine application using grails. Unfortunately, I think its still pretty early as I ran into several issues early on. However, I see enormous potential once these issues get resolved.
I am using grails v1.1.1, app-engine plugin v0.8.5, with gorm-jpa v0.5. The first issue I ran into was deploying when using grails app-engine deploy. It failed to work subsequent times after I got the WAR initially deployed using /app-sdk/bin/appcfg.sh. It complained about not supplying an email address. Turns out there is a bug related to ant that should get fixed soon. The work around was simple enough; just hit Enter before typing in your email address.
Secondly, I was disappointed to find out that the spring-security (acegi) plugin wasnt compatible in GAE. Based on the compile errors I received locally, it appears spring-security depends on hibernate which is not an option in GAE (you either get JDO or JPA). I chose JPA because according to the documentation, JDO doesnt support any of the GORM dynamic finders methods where as JPA supports most of them. I guess now that I think about it, Im not suprised acegi didnt work in GAE; just disappointed.
I found a minor issue I submitted concerning the default delete action in generated controllers. Seems the gorm-jpa plugin doesnt wrap the delete method around a [Domain].withTransaction closure which apparently is required (see the save action).
Finally, I was unable to get content negotiation working using the withFormat concept I described here. It worked locally running grails app-engine run, but threw an exception in GAE:
Caused by: java.security.AccessControlException: access denied java.lang.RuntimePermission getClassLoader
My guess is its related to the Security issues they report on the FAQ:
"The current preview release of the Google AppEngine SDK has a bug that doesnt allow it to run Groovy code when the full permissions restrictions are used. This will be fixed in the next release, but in the meantime the development environment runs without emulating the permissions restrictions of the actual AppEngine environment."Overall, I enjoyed the easy commands it provides to build, run, and deploy to GAE. The deploy was suprisingly pretty quick. I was able to view the exceptions in GAE easily. I was just prevented from making any real progress. Its about to snow up here in Massachusetts, but ignoring that it is almost summer and almost festival season. Whether youre looking for something to wear to a gig this year or if you just want some ideas for Goth clothing that wont kill you in the summer heat, I love these looks.
All of these outfits were all put together with clothing from RebelsMarket, the amazing people who helped me run the Gothic ring giveaway just last year. They have a lot of alternative clothing in stock from all different sellers, including some that specialize in gothic clothing. So, thank you to them (watch this spot, we might have a new giveaway coming up soon) and lets get right into the looks:
This first one is a pretty easy look with a Mistress of the Macabre tank top and shorts, which I just added accessories to. Festival clothing doesnt have to be too elaborate to look great. The shorts are velvet but because of how short they are and because theyre on the lower half of your body, they shouldnt boil you alive like a velvet jacket would. I love the cross choker on this look, too.

Next up is this look which is all about the spikes for me (Side note: as I was researching for this post I made an offhand comment to the person Im currently seeing that all goth clothing is covered in spikes, to which she responded "That sounds dangerous." Just thought it was cute and that I would share.) The stockings have attached garters to them which are gorgeous, little details like this add gothy interest to a look without too many layers.

For summer I love sheer chiffon-like tops but I also love layering them with more structured things like harnesses or corsets to add a bit of contrast (Note: if youre hoping not to break any public indecency laws, wear some kind of tank top / bandeau under this shirt. Its very sheer.) The jeans would be great if you know youre going to be sitting around in the grass and you can absolutely add some DIY touches with patches or shredding if you desire.

So this look is very much so more Gothic Victorian, but if you were going to attend any festivals that require a bit more dressing up (Im thinking about Wave Gotik Treffen personally) this is a great look. Yes, there is a corset involved, so please drink lots of water and lace less tightly if you need. The star of this show is clearly the skirt which is super detailed and lovely with a lacey hem to give a bit of breathability. I love the look of Victorian blouses but the sleeves seemed a bit much for me (if you had a shawl to add, thatd be a great touch.) Make sure to add sunglasses, a parasol, and a fan to keep cool.)

Weve talked about witchy fashion before on this blog and I mentioned that it was better for autumn, but heres my take on something a bit more for summer. I started with this maxi skirt and I wanted a long sleeved blouse, but to make it better for summer I found this one with partial sheer sleeves. Perfect! They add a fantastic witchy flair without too much heat (bonus: they cover your arms to prevent too much sun exposure.) The rest is just accessories, including these Deaths Head Moth hair clips which I adore.

This first look is pretty basic with my favorite graphic tee that I found on RebelsMarket, this tarot card one, and just added black jeans and boots as well as a couple of accessories. I love the idea of putting patches on jeans (I just recently put a patch on the back pocket of my favorite pair of shorts, would recommend.)

One thing RebelsMarket has in abundance are patches so I took advantage of this to "decorate" a black faux leather jacket. If leather is too hot for the festivals where you live, a black denim jacket or even a vest does exactly the same thing. I also added a mesh shirt to keep things cool and because I love how they look, but if youre one of our more modest goth fellas out there you could layer with a t-shirt or a tank top.

Get Happy with Division
Oh, the joy of teaching division! My 4th graders always struggle when learning this concept. Ive learned a few tricks over the years that have made the journey a little smoother. I wrote a song to the tune of YMCA. The students really enjoy dancing and singing along to this catchy tune. You can download just the instrumental version of the song from several internet sources for free or cheap. Ive made up some movements to accompany the song. We sing it throughout our division unit. To help the steps stick I let the students play Division Relay. I make two teams of students, and each team must race to finish the division problem. A student may only do one step in the division process, and then must pass off the marker to the next student. In addition to this, I also give the students a step by step reference sheet to keep in their folder. Learning and making division fun is Classroom Magic!

Glaxo Fires Latest Shot in Patent Battle with Genentech over Therapeutic Molecule Antibodies
On September 20, Glaxo Smith Kline (Glaxo) sued Genentech for infringement of US patent numbers RE40,070 and RE41,555 in the District of Delaware. The patents claim methods of purifying monomeric IgG antibody using hydrophobic interaction chromatography. GSK alleges in its complaint that Genentechs production of therapeutic monoclonal antibody products, specifically Herceptin, infringes the patents. Herceptin is an important monoclonal antibody therapeutic used to treat HER2 positive breast cancer. The complaint is available here.
The lawsuit is the latest volley in an ongoing patent war between GSK and Genentech over recombinant monoclonal antibody technology. Most of the patents that have been asserted are directed towards general methodologies used in the production and formulation of monoclonal antibody therapeutics.
For example, in 1999 Glaxo sued Genentech for allegedly infringing US patent numbers 5,545,403 and 5,545,405 (both generally claiming methods of treatment using recombinant antibody glycosylated by Chinese hamster ovary (CHO) cells), and US patent numbers 5,654,403 and 5,792,838 (both directed towards methods of stabilizing antibody formulations using copper chelators). Glaxo alleged that the patents were infringed by Genentechs production of Herceptin and Rituxan, two cancer drugs that target breast cancer whose tumors over express the HER2 protein and CD20 positive, B-cell non-Hodgkins lymphoma, respectively. A district court held for Genentech, finding all of the asserted Glaxo claims invalid and/or not infringed. The case settled while on appeal to the Federal Circuit.
In 2000, Glaxo sued Genentech for allegedly infringing US patent number 5,633,162, which claims methods of growing CHO cells in a serum-free medium. While the complaint does not specifically identify the allegedly infringing Genentech products, Genentech reported in a filing to SEC that it assumed that the lawsuit was directed towards Herceptin and Rituxan. This case settled early in the litigation.
In 2009, Glaxo received FDA approval to market Arzerra, an anti-CD20 approved for the same indication as Genentechs Rituxan (chronic lymphocytic leukemia). Thus, the two products can be viewed as direct market competitors, perhaps biosimilars (we are still awaiting guidance from FDA as to criteria for biosimilarity under the new biosimilarity legislation passed by Congress as part of healthcare reform).
In 2009, Glaxo filed a declaratory judgment action in the Southern District of Florida seeking a judgment of invalidity, unenforceability and noninfringement with respect to Genentechs patent number 6,331,415. This patent is widely referred to as the “Cabilly II” patent, and came out of a highly publicized interference between Genentech and Celltech. The patent broadly covers the co-expression of immunoglobulin heavy and light genes in a single host cell. Genentech has been quoted as stating that the patent is "the backbone of recombinant antibody production in the biotech industry." Genentech has already asserted the patent against MedImmune and Centocor, alleging that those companies’ production of monoclonal antibodies products Synagis, ReoPro and Remicade infringe the patent. The litigation between Genentech and MedImmune resulted in a Supreme Court decision on standing of a patent licensee to bring a declaratory judgment action action challenging the patent. Genentech successfully moved to have the litigation transfer to the Central District of California, where the Centocor and MedImmune litigations are located.
In 2010, Genentech (along with Biogen Idec, its partner in the marketing of Rituxan) sued Glaxo in the Southern District of California for allegedly infringing US patent number 7,682,612. The patent claims methods of treating chronic lymphocytic leukemia using an anti-CD20 antibody, and thus invalid would appear on its face to be infringed by Arzerra. This case is somewhat noteworthy, since it is the only one in which the patent is specifically directed towards an antibody recognizing a specific antigen (CD20), as opposed to the other patents all relating to general methods of antibody production and formulation.

This document details the steps to get GLUT working along with Visual C++
Express Edition.- Download and install Visual C++ Express Edition from http://msdn.microsoft.com/vstudio/express/visualc/default.aspx
- The default install of Visual C++ Express Edition builds for the .Net platform. Well need to build for the Windows platform since OpenGL and GLUT are not yet fully supported under .Net. For this well need the Microsoft Platform SDK.
- Download and install Microsoft Platform SDK. Visual C++ Express Edition will need to be configured to build for Windows platform. All these instructions are available here: http://msdn.microsoft.com/vstudio/express/visualc/usingpsdk/ (no longer valid, use http://msdn2.microsoft.com/en-us/express/aa700755.aspx instead)
- Now, well need GLUT. Download and unzip Nate Robins Windows port of GLUT from here: http://www.xmission.com/~nate/glut.html
- Add glut.h to the GL directory in the platform SDK/include.
- In your Visual C++ Express Edition project properties -> Additional Linker Directories add the directory which has glut.lib
- Add the glut.dll to the Windows System32 directory.
- Your program which uses GLUT or OpenGL should compile under Visual C++ Express Edition now.

Is there anything more comforting than a grilled cheese sandwich? No, I really don’t think so. After a long, hard day of work, especially the kind when I’m too exhausted to cook myself a real meal, I usually make a grilled cheese sandwich. They’re my saving grace — easy and effortless, instantly comforting, and always tasty.
So today I thought I’d deviate from my usual baking and desserts recipes to share with you guys this humble grilled cheese sandwich. It deserves a spot on this blog, not only because it’s one of the recipes that has saved my life far too many times, but also because it’s simply delicious. And this one is particularly near and dear to my heart since a lot of the ingredients I’ve used are grown and made by yours truly. The sage comes from the herb box I’ve miraculously been keeping alive since Erlend’s departure, while the apple and cranberry chutney is one that I’ve made and canned myself to take advantage of this season’s bounty.
And yep, you read that right. Chutney that I’ve made and canned myself. While it sounds super crazy and impressive, it’s actually really freaking easy, I promise. I like to use the Boiling Water Bath Method to can and preserve foods. It sounds fancy and difficult, but it’s really not. At the end of the day, the mechanics behind canning are pretty straightforward — you simply fill sterilized jars with the prepared food that you want to preserve before covering and submerging the entire thing in boiling water. After you remove the jars from the water and they start to cool, heat escapes from the inside and takes with it all the air left in the jar. This escaping air pulls the lid down to create an airtight seal and just like that, you’ve preserved food that will last you for at least a year! Science — it’s pretty neat.
Without further ado, my guide to canning:

Water Bath Canning Fruits, Preserves, and Chutneys
To can, you’ll first need to gather and prep all your canning equipment. You don’t need a ton of fancy stuff, but there are definitely a handful of requirements:
- Glass canning mason jars with metal lids and rings. This is the fun part! You can pick from a variety of sizes and shapes; if you’re working with a small batch recipe like this one, I recommend a variety of half-pint jars. However, if you’re using a variety of sizes, it’s best to have a couple or triple of the same bunch so that you can boil those jars in the same batch. I also prefer wide-mouth jars for easier funneling.
- A large, deep stockpot. The pot doesn’t have to be fancy, but it does need to be tall enough to hold enough water to cover the top of your tallest mason jar plus an extra inch or two of water.
- A canning wire rack or a silicone trivet small enough to fit into the stockpot. Without a rack or trivet at the bottom of the large stock pot, you run the risk of ruining your preservatives by overcooking the bottom (and maybe even cracking the glass jar!). You can get a special wire rack for canning like I did, or you can use any waterproof trivets (think: silicone or metal) that you might already have lying around. A vegetable steamer also works!
- Clean kitchen towels. When canning something, there’s generally a lot of dunking jars in and out of a vat of boiling water. Lining your countertops with clean kitchen towels is a great, easy way to minimize contamination, help prevent accidents, and makes for easy clean-up.
There are also other tools that are definitely “nice-to-have” when canning. These aren’t really necessary for the occasional cannist, but if you’re planning on making canning one of your hobbies and main sources of food preservation, I highly recommend investing in the following equipment:
- Mason jar canning tongs. You can use a regular set of kitchen tongs as well, but they won’t be as easy to use/grippable as canning tongs. Good canning tongs will be covered in rubber at both the lifting end (to provide grip on the slippery, wet jars) and the holding end (to prevent the tongs from burning up your hand when held over the steaming hot stockpot).
- Magnetic lid lifter. After sterilizing your canning jars, you’re supposed to handle the jars and lids as little as possible (or you run the risk of contracting botulism, YIKES). You can easily use the canning tongs to handle the jars, but it’s a little trickier to use them for the metal lids and rings. This is where the magnetic lid lifter comes in. But again, don’t be intimidated — this is just a nice-to-have! You can always use a clean kitchen towel to handle all these items after sterilization.
- Wide-mouth canning funnel. This funnel is a godsend if you’re canning something particularly messy, especially if you’ve gone against my advice and used small-mouthed jars.
- Cookie dough scoop. You can also use a plain old regular spoon or ladle, but the cookie dough scoop works the same way as the funnel by making your life much easier (especially if you’re working with a really sticky preservative).
- A wire rack. A second, larger wire rack is handy in drying your canning equipment after sterilization and allowing the preservatives to cool evenly after processing.
After you’ve gathered all your tools, it’s time to sterilize your canning equipment. Line the bottom of your stockpot with whatever trivet you’re using. Place all the jars, lids, and rings that you’ll be using in the stockpot on top of the trivet, and fill both the jars and pot with enough water to just barely cover the tallest jar you’ll be using.
Add a generous splash of white vinegar to the pot to help prevent any minerals from depositing onto the canning pot or jars. Bring the entire thing to a boil over high heat, and boil for around 15 minutes, before using the canning tongs and lid lifter to fish out the mason jars, lids, and rings. Shake out any excess water over the towels and transfer to a dry wire rack to air-dry completely. Try and avoid touching the equipment after this point. It’s also best to keep the stockpot filled with the water and rack/trivet on the stove at a gentle simmer, ready to be used after you prep your preservatives.
While the cans are being sterilized, prepare your ingredients for your preservatives; in this case, our apple cranberry chutney for our grilled cheese sandwiches! You’ll find the exact ingredient quantities in the recipe below, but the prep is pretty simple: simply peel and dice the apples into ½-inch chunks, before combining them in a pot with the cranberries, granulated sugar, and water. Use a rubber spatula or wooden spoon to combine all the ingredients together until the fruit is covered in a thick sugar syrup.
Bring to a boil over high heat, using a slotted spoon to skim off any foam that develops on top of the fruit and stirring occasionally to prevent the fruit from burning. Cook for 10 to 15 minutes, until the cranberries pop and the apples soften. Add the lemon zest, juice, and balsamic vinegar and simmer until the liquid in the pot begins to thicken. Since both apples and cranberries are naturally high in pectin ( a kind of thick, gelatinous natural sugar), you don’t need to add anything else to help set the chutney. However, it is important that you keep cooking the mixture until it’s thick and syrupy — there’s no right amount of time for this, you’ll just need to eyeball it.
Once the chutney is ready, it’s time for another fun part — filling the mason jars with the preservatives. Before you fill your jars, however, prep your boiling water bath by bringing the water in the stockpot from a simmer and back up into a boil. While the water is boiling, transfer the chutney into the prepared jars using the wide-mouth funnel and cooking dough scooper. You’ll need to leave about a ½-inch between the preservatives and the top of the jar.
Now it’s time to cover and seal the mason jars. Wipe the rims with a hot paper towel before centering a lid on each jar and securing with a ring. It’s important that you don’t over tighten the rings as there needs to be enough space for the oxygen in the jars to escape. Only tighten as much as you can with the tips of your fingers, turning just until the ring meets resistance and no more.
Once all the jars have been filled and covered, return them back to the stockpot to process the preserves in the boiling water. Use canning tongs to lower each jar into the stockpot on top of the wire rack or trivet, ensuring that each jar is fully submerged and covered with about an inch of water. When the pot returns to a boil, boil the jars for 10 minutes. After 10 minutes, use the tongs to remove the jars from the water bath and place them on either towels or a wire rack to let them cool. The jars should begin to *PING* soon after they’ve been removed from the pot — that pinging is the sound of seals being formed as the center of the lids will become concave as the vacuum seal takes hold.
After the jars have cooled to room temperature, remove the metal rings and check the seals by grasping the jar by the edge of the lid and lifting it an inch or two off the countertop. The lid should hold. Store your jars in a cool, dark place for up to a year. Refrigerate all jars after opening and breaking the seal.
If the jars didn’t seal, there may have been a bit of product on the rim of the jar that prevented the lid from getting a good hold. Not a big deal though — simply refrigerate any unsealed jars and use first. Use them in these grilled cheese sandwiches, and all the grilled cheese sandwiches to come.
